Arabica Coffee

Arabica coffee, also known as coffee cherries in Vietnamese, has a morphology similar to tea plants – a common industrial plant in Vietnam, with small leaves. Coffee cherries are divided into two main types: moka coffee and catimor coffee.

Considered the most economically valuable species, Arabica accounts for a large proportion, up to 61%, of the world’s coffee production. Accordingly, Brazil and Colombia are two famous countries that are major exporters of this type of coffee.

Bourbon Coffee

Bourbon is a coffee variety belonging to the sub-species of Arabica. Thus, this is a natural mutation from Typica, with significant significance in global genetics. Bourbon coffee originates from the Bourbon Island, France, and was brought to Vietnam in 1875. Here, they established many coffee plantations to cultivate this unique coffee variety.

Biologically, Bourbon coffee trees usually have a single main trunk (Yemen) or produce multiple stems (Ethiopia). Besides, ripe cherries can have red, orange, or yellow colors, depending on the variant. Bourbon coffee beans are usually rounder than Typica and other Arabica varieties.

Typica Coffee

With special genetic characteristics, Typica coffee contains a large amount of malic acid, creating a sour taste similar to apples, combined with a sweet flavor, providing an interesting experience. Compared to Bourbon, this coffee variety has longer beans but lower yields, about 20-30% less. Moreover, Typica coffee is susceptible to various pests and diseases such as coffee leaf rust or berry disease.

Although coffee trees of the Typica variety often produce extremely high-quality coffee beans, they have relatively low economic efficiency.

Robusta Coffee

Robusta coffee, also known as vối coffee, is one of the popular and preferred types of coffee in the Vietnamese market due to its bitter taste. This type of coffee originates from the Sahara, West Africa. In Vietnam, Robusta coffee is often grown extensively in the Central Highlands, at ideal altitudes below 1,000m. These coffee trees have large sizes, reaching heights of up to 10m when mature.

Statistics show that over 90% of coffee growing areas in Vietnam use Robusta coffee varieties. Especially, Vietnam is the world’s leading exporter of Robusta coffee.

Culi Coffee

Culi or Civet coffee is a term referring to coffee beans that are round and full, providing a unique experience due to its strong bitterness, high caffeine content, and dark black color. Typically, each coffee cherry contains 2 coffee beans, and the coffee beans are usually flat in shape. However, due to genetic mutations, Culi coffee beans have only 1 nucleus, developing into a fuller round shape.

To ensure quality, Culi coffee beans are often separated, roasted independently, and commercially traded individually. The price of this type of coffee is usually higher than other similar types, reflecting its uniqueness and specialty in the coffee market.

Cherry Coffee

Cherry coffee belongs to the Coffea Excelsa or Coffea Liberica species in the Rubiaceae family, representing the third branch of popular coffee types after Arabica and Robusta. With tree and leaf sizes similar to jackfruit trees, this type of coffee is also called jackfruit coffee. Cherry coffee is suitable for various climates and has good resistance to pests and diseases. Although it has a high acidity, it is rarely grown, accounting for only about 1% of the total coffee consumption worldwide.

In terms of appearance, Cherry coffee trees have tall stems, shiny and large leaves. The tree adapts well at altitudes from 800 to 1,000m, with temperatures around 25 – 30°C and minimum rainfall of 1,000mm. Currently, this coffee tree is mainly grown in the Philippines, Malaysia, and some countries in West Africa.

Moka Coffee

Moka is a type of coffee belonging to the Arabica genus, brought to Vietnam by French immigrants in the 1930s. These coffee beans are usually small, hard, and have colors ranging from greenish yellow to light yellow. The shape of Moka coffee beans worldwide is not fixed, ranging from small to misshapen round. In Vietnam, the production of Moka coffee is very low, mainly from “cối” trees in Cau Dat, Lam Dong. The reason is due to climatic conditions, altitude, and the difficulty of soil quality for breeding and care. Therefore, the low yield combined with high-quality beans has made the price of Moka coffee higher than the general price of coffee in Vietnam.

Catimor Coffee

In the 19th century, the Central-South America region often faced epidemics on coffee trees, especially for varieties like Bourbon, Typica, and Moka. To solve this problem, researchers made efforts to create a coffee variety with better disease resistance, small tree trunks, and high productivity.

In 1959, Portuguese researchers succeeded in creating the Catimor coffee variety, meeting these criteria. This is the result of the crossbreeding process between Timor coffee and Caturra coffee.

The Catimor coffee plant is evaluated to have high productivity, good disease resistance, small size, and suitability for growing many trees in the same area. These coffee beans were first introduced in Brazil in 1970 and have had a positive effect as farmers and coffee factories seek high-yield coffee varieties.
